Our focus is to support local, renewable, sustainable natural resource management, traditional and all natural food production, Hawaii is an amazing place and the food that is produced here is a reflection of its diversity. The dishes that we create are what we call "Modern Hawaiian Cusene" and are uniquely Hawaiian, for only in a place like Hawaii can you draw on so many influences at once. Like the seasons the dishes we are creating change throughout the year. An intimate relationship with our community and  our surroundings allows us to know what is available what can be harvested from the wild, what is being grown on the farms and in the back yards of our favorite foodies, farmers and growers. Almost every thing we use is made on Kauai. If I were to break it into a percent ratio I would say at times 70% to 100% of what we serve is made or grown here on Kauai. We can acomadate just about any request or dietery need, from traditional Hawaiian style luau to live vegan, vegetariangluten free, fresh from the ocean or live from the farm. With DKC in the kitchen you are sure to taste the flavors of a life time of dedication to the art of food, the value as well as the love, which to Hawaiians is the most important ingredient that goes into producing the ingredients we use.
